Today's recipe is my new favourite! They are extremely indulgent chocolate biscuit cake squares. I discovered the recipe in 'Green & Blacks Chocolate Recipes' book. The book is filled with delicious looking chocolate recipes. Here is my version of their 'Konditor & Cook Chocolate Biscuit Cake'.
Ingredients:
- 125g unsalted butter
- 75g golden syrup
- 200g chocolate ( I used dark, but you can do half-and-half if you please)
- 1 egg
- 50-100g digestive biscuits (They suggest 50g, but you can double it, or eyeball it)
- *50g halved walnuts
- *50g sultanas
- *50g halved hazelnuts
* These ingredients depend on your favourite fillings. I would suggest using marshmallows, cherries, chocolate chunks, etc...
Method:
- Line a small brownie pan or loaf tin with baking parchment paper/greaseproof paper.
- Melt the chocolate in a heatproof bowl that is suspended over a saucepan of simmering water.
- Melt the butter and golden syrup in a small saucepan over little heat until it starts to boil.
- Add the butter and golden syrup mixture into the chocolate and stir until combined.
- Next beat an egg in a cup before pouring it into the chocolate mixture.
- Slowly and continuously beat the egg and chocolate mixture to pasteurise the egg. It does get thick and difficult to stir.
- In a separate bowl, add the dry ingredients; walnuts, biscuits, sultanas, hazelnuts.
- Pour the chocolate mixture onto the dry ingredients and mix together with a spatula until the dry ingredients are coated with the chocolate.
- Press the mixture into the tin and leave it to set in the fridge for 4 hours. Then remove it from the fridge, peel the paper off and cut into slices.
- They are best served straight from the fridge.
