Ingredients:
- 4 oz xylitol (healthier alternative to sugar)
- 2 oz butter
- Finely grated rind and juice of 2 good lemons (avoid grating the white pith)
- 2 eggs
- 1 egg yolk
Recipe:
1. Begin by melting the butter on a low heat.
2. Add the xylitol, lemon juice and rind and then the well beaten eggs (both whole and yolk).
3. Stir it carefully over a gentle heat until the mixture coats the back of a spoon.
Tips:
How to sterilise jars and lids
- Place jars on a tray in an oven heated to 160°C and only remove them from the oven when you are ready to jar the lemon curd.
- Place the lids in a pot of water. Bring it to the boil and then turn off. Before you use the lids, remove from water and dry thoroughly with a paper towel of clean cloth.
I hope you enjoyed that recipe like I did. It is a great gift to give to someone also. I love how it is not overly sweet but zesty, like a lemon. I had it with some gluten-free digestive biscuits and it was delicious. Lemon curd it great to have during the summer with fruit, ice-cream or even meringue.
