Tasty Tuesday #17 Roast Vegetables


Today's recipe is a great way to eat vegetables, roasted. It makes them taste sweeter and is also great to throw into a soup the next day.


Ingredients:
1 courgette
1 large carrot
3 small peppers
1 sprig of celery
1 sweet potato
1 whole red onion
1 large parsnip 
* 75-100g of goats cheese (however much or less you want).
A drizzle of oil
Garlic granules to taste
Salt and pepper to taste
*optional

Method:

1. Cut, peel and dice all the vegetables into big enough chunks, you want to be able to eat one in one go. 
2. Drizzle your oil onto your baking tray before popping your vegetables in. 
3. Add as much garlic granules, salt and pepper to the dish to taste. It helps bring out the flavour a bit more. 
4. Roast the vegetables in a preheated oven of 180 degrees Celsius for 20-30 mins
5. For the last 10 mins of roasting, add your goats cheese on top of the vegetables. This ensures that it is just nicely melted.
6. Take out the roast vegetables and pop on to a plate to enjoy.
