Tasty Tuesday #24 Zesty Lemon Curd



Today's post is very different from the other Tasty Tuesday's I have posted in the last while. The recipe is not chocolate (lucky for those who don't like it) and instead it's a zesty lemon curd that is very delicious but surprisingly healthy. Lemon curd can be paired with ice-cream, biscuits and anything really. It is like a jam, but it's both sweet and zesty.  But let's move on to the ingredients and recipe. 
Ingredients:
  • 4 oz xylitol (healthier alternative to sugar)
  • 2 oz butter
  • Finely grated rind and juice of 2 good lemons (avoid grating the white pith)
  • 2 eggs 
  • 1 egg yolk
Recipe:

1. Begin by melting the butter on a low heat. 
2. Add the xylitol, lemon juice and rind and then the well beaten eggs (both whole and yolk). 
3. Stir it carefully over a gentle heat until the mixture coats the back of a spoon.
4. Next remove from heat and pour into a bowl or jar to store in. It does thicken once it cools. 

Tips:

How to sterilise jars and lids
  • Place jars on a tray in an oven heated to 160°C and only remove them from the oven when you are ready to jar the lemon curd.
  • Place the lids in a pot of water. Bring it to the boil and then turn off. Before you use the lids, remove from water and dry thoroughly with a paper towel of clean cloth. 






        






I hope you enjoyed that recipe like I did. It is a great gift to give to someone also. I love how it is not overly sweet but zesty, like a lemon. I had it with some gluten-free digestive biscuits and it was delicious. Lemon curd it great to have during the summer with fruit, ice-cream or even meringue.
