Tasty Tuesday #26 Banana Bread


Today's recipe is one for banana bread. It is a great recipe if you want to use up any over-ripe bananas you have around the house. It is actually very delicious and quite indulgent. I would definitely make this again, and maybe add different/more fruit and nuts.

Ingredients:
  • 100g softened unsalted butter
  • 140g light muscovado sugar
  • 2 large eggs
  • 3 large ripe bananas, mashed
  • 50g pecans, chopped roughly
  • 50g raisins
  • 150ml buttermilk
  • 280g plain flour
  • 1tsp bicarbonate of soda




Method:


1. Preheat the oven to 160°C (fan), 180°C (conventional) or Gas 4.
2. Butter and line the base and sides of a loaf tin.
3. Whisk the butter and sugar together in a large bowl until creamy.
4. Beat the eggs in one at a time into the mixture.
5. Next stir in the mashed bananas, pecans, raisins and buttermilk.
6. Sift in the flour and bicarbonate of soda on top of the mixture.


7. Fold in until the mixture is evenly mixed, making sure not to overmix.
8. Spoon the mixture into the loaf tin, leveling it on the top.
9. Bake the cake for 1 hour 15 minutes - 1 hour 30 minutes, until a skewer pushed in the centre comes out almost dry, but not quite.
10. Once baked, remove from oven and cool for 10 minutes before turning it out onto a cooling rack to cool.
11. Enjoy eating!
