Tasty Tuesday #35 Blackcurrant Jam



Today's recipe is blackcurrant jam. I love this, especially on toast in the mornings. It makes morning even better when you know you made it yourself. Here's how you make it.

Ingredients:

  • 250ml water
  • 300g/10½ oz blackcurrants (preferably fresh)
  • 300g/10½ oz granulated or caster sugar
  • Juice of 1 small lemon

Method:

1. Begin by removing the stalks from the blackcurrants and place them in a large saucepan. Cover them with the water and bring them to a boil.

2. Simmer them for 20 minutes. until the skin is tender.


3. Add both the sugar and lemon juice to the blackcurrants, bring them to a boil and cook until the temperature reaches 105C/220F on a sugar thermometer.




 Alternatively you can put a plate into a freezer the night before and use that to test the jam. When you place a bit of jam on the plate, wait until it cools. Poke it and if it wrinkles, it's ready to pour into jars. 

4. Pour it into hot clean jars and seal immediately.
